Aunt Lisa's Pork Chops

These pork chops are perfect, moist, and delish! Oh, and did I mention, way easy?!?!

Total Time: 50 min
Serves 4

Ingredients
2 cups Ritz crackers, finely crushed
1/4 cup parmesan cheese
2 tsp garlic powder
1/2 tsp dried sage
4 boneless pork chops
1 cup plain yogurt

Directions
In a medium bowl, combine crackers, cheese, garlic powder, and sage. Set aside.
Coat each pork chops in yogurt, then dip both sides in crumbs. Place in greased baking dish.
Bake @ 350 F for 45 minutes.

Parmesan Dijon Baked Cod

I had never tried cod before and found this recipe and thought I'd give it a try. And it's delish, easy, and quite healthy with less than 150 calories per serving. Sorry that the pictures are horrible.

Prep Time: 5 min
Cook Time: 30 min
Serves 4

Ingredients
1 pound cod fillets
1 tablespoon mayonnaise
1 tablespoon dijon mustard
1 teaspoon Worcestershire sauce
2 tablespoons minced yellow onion
1/4 cup grated parmesan cheese

Directions
1. Preheat oven to 350 degrees. Line a baking sheet with aluminum foil; mist lightly with cooking spray. Pat fish fillets dry with paper towel and arrange on baking sheet.
2. In a small bowl, combine next four ingredients; spread evenly over fish. Sprinkle fish with grated parmesan cheese.
3. Bake on rack in upper third of oven for 25 to 30 minutes or until browned and fish flakes easily with a fork.

South-of-the-Border Chicken and Pasta Skillet

Time: 35 Min
Serves 4

Ingredients:
2 cups medium shell pasta
1 lb boneless skinless chicken breasts, cut into bit size pieces
1 jar thick 'n' chunky salsa
1 10 oz. package frozen corn
4 oz cream cheese, cubed
1/4 tsp cumin
1 cup Mexican style shredded cheese

Directions:
Cook pasta as directed on package.
Meanwhile, cook and stir chicken in large, nonstick skillet sprayed with cooking spray on medium-high, 6 min or until done.
Add next four ingredients . Mix well.
Simmer on medium-low heat until cream cheese is melted, stirring occasionally.
Drain pasta, add to chicken mixture in skillet with 1/2 cup shredded cheese.
Simmer 3 min or until cheese is melted, stiffing occasionally.
Top with remaining cheese, cover.
Remove from heat. Let stand until cheese is melted.
Serve immediately. Enjoy!

Macaroni Grill Rosemary Bread


Total Time: 2.5 hours
Makes: 2 loaves

Ingredients:
1 Tbs yeast
1 Tbs sugar
1 cup warm water
2 1/2 cups flour
1 tsp salt
2 Tbs. rosemary
2 Tbs. butter

Directions:
Place yeast, sugar, and water in a large bowl and allow mixture to become bubbly (about 15 minutes).
Mix in 1 Tbs butter, salt, and 2 cups of flour.
Add 1 Tbs. rosemary.
Knead for about 10 minutes by hand. Add more flour if necessary.
Oil a bowl and put dough in it and cover with a towel. Let dough rise in a warm place for one hour until dough has doubled in size.
Punch down dough and divide in half. Let dough rest about 5 minutes.
Spray cookie sheet with cooking spray. Shape dough into two small rounded loaves. Sprinkle remaining 1 Tbs rosemary over the loaves and press lightly into the surface.
Let loaves rise again until doubled, about 45 minutes. Preheat oven 375 degrees.
Bake 15 to 20 minutes. Remove from oven and brush with remaining butter.

Serve warm. Dip in olive oil and balsamic vinegar. Enjoy!
